This ability not only interrupts multiple round skills, it also interrupts the opponents turn if you go first!
This ability does not interrupt multi-round attacks for me.
For example, if an enemy squirrel throws up Nut Barrage, I try Interrupting Gaze...but the nuts never stop falling. This happens whether IG hits or not.
This interrupt also does not interrupt the Swarm ability, and I would assume the other abilities that mirror it's effects.
So much confusion here so I'll just define "multi-round ability" for y'all. It means an ability whose tooltip explicitly reads "2 Round Ability" or "3 Round Ability". It doesn't mean any ability whatsoever that takes 1 round to use but then deals its effect over or after x rounds. The pet uses it in round N, and in round N+1 (and possibly +2) he automatically uses it again. No option to do anything else.
Wowhead unfortunately doesn't list the "x Round Ability" part of the tooltips, but you can see them ingame. They're still in the descriptions though. Here are some examples of multi-round abilities:

Not smart to interrupt though; it's rarely this ability that hurts (and not all versions even have a cooldown), it's what they do with the damage debuff after, so let them use three rounds on this and then steal one debuffed round from them. If your pet is faster and uses this, your opponent loses his round, as Glaucus mentioned.

Can anybody explain how this actually works? It does not interrupt the enemy's round reliably for me.
Critters are immune to interrupt.
