Staff note: This guide is outdated but kept up for Archival purposes due to the positive feedback it received when it was relevant.
There are two kinds of folks interested in raising their Skinning Profession. The first person is interested in skinning as they level their character. The second person has a character already at max level and is dropping another profession for skinning, possibly with an interest in farming leather for gold.
The reason I bring up the two different audience members of this guide, is that when to change a zone differs. The max level character will switch as soon as possible, on the theory that the loot from a higher level zone is more profitable. A leveling character will probably delay switching zones, on the understanding that killing lower level mobs is quicker, providing a better return on their time.
This guide is written primarily for the max level farmer. A leveling character will consulting here on occasion. You'll be levelling when suddenly you get failure messages on your attempts to skin. Come check here to see where you can go for beasts you can skin and farm for a time until you're ready to concentrate on levelling again.
Equipment
When you pay a Skinning Trainer to start your Skinning Apprenticeship, don't leave until you find the nearby vendor that will sell you a
Skinning Knife
.
Bladed Pickaxe
,
Finkle's Skinner
, the
Zulian Slicer
and the
Zulian Slasher
will also function as skinning knives, but the
Gnomish Army Knife
is the real winner if you change profession a lot. Still you'll want all the bonuses you can get when it comes time to skin Bosses in the end game!
Bag of Many Hides
can hold all your skinned products.
Enchant Gloves - Gatherer
and
Enchant Gloves - Skinning
will give you a +5, allowing you to change zones that much sooner, if you're in a rush.
By Training Level
Any starting 5-10 zones are suitable for starting the skinning journey, but
Durotar
and
Elwynn Forest
have a slight edge, having conveniently located boars that respawn quickly enough just south-west of Orgrimmar and Goldshire, respectively. However personal preference easily overrides any miniscule theoretical advantage.
You can learn Journeyman when Skinning hits 50, but don't change zones until you hit 60, otherwise you won't be able to skin many of the mobs. You'll need to find a trainer when you hit 75. I'll repeat that, wait until your skinning has levelled to between 60 and 75 before you leave this zone.
Most of the beasts will be granting
Ruined Leather Scraps
. Don't vend these as trash. Either forward them to your Leather working mule or put them up on the auction house.
Durotar Map
There are many factors in selecting where to work on your skinning. A low-level skinner probably starts in a place like Razor Hill with a profession trainer, such as
Runda
. There's nothing wrong with immediately skinning the 6-7 level
Dire Mottled Boar
around Razor Hill, but a max-level character probably re-trained skinning at a capital and there are more convenient choices near the big cities, such as
Mature Swine
and
Elder Mottled Boar
. The differences between such targets include the ratio of
Ruined Leather Scraps
to
Light Leather
and the frequency with extra drops, such as
Chunk of Boar Meat
.

Unlike Orgrimmar, the best skinning in the forest isn't just outside the city gates, but south of Goldshire. The lower level
Stonetusk Boar
and higher level
Rockhide Boar
a good skinning opportunities that also have extra drops, such as
Chunk of Boar Meat
.

After training for Journeyman, you'll want one of the 10-20 zones, such as the
Northern Barrens
or
Loch Modan
. These zones will be fine until you're around level 110, when you're going to want higher level beasts. The problem is that you can't train Expert until level 125. Typically you'll need to change zones, and then interrupt your farming to find a trainer.
To finish the journeyman level, you'll move to
Duskwood
,
Ashenvale
or
Wetlands
. There are not Skinning Trainers in those zones, unfortunately. So move to the new zone and skin for a while and then visit your preferred capital to see the Auction House and Train before returning to where you were farming.
You'll have plenty of Light Leather, but should start seeing some Medium Leather and Light Hides.
Northern Barrens Map
The plateau top just south of Farwatch Post has a nice series of beasts without being too far away from Orgrimmar.

Immediately after training for Expert, you'll want the level 25 to 30 zones, such as
Wetlands
. In Kalimdor,
Stonetalon Mountains
hosts
Pridewing Wyverns
with fast respawn timers.
Somewhere around Skinning Level 185, we'll be ready to move to a level 30 zone,
The Hinterlands
or
Dustwallow Marsh
. These zones will serve you well until you reach something over 200, the minimum to train Artisan.
You should have both Medium and Heavy Leathers in your bags after all of this.
As a freshly trained Artisan Skinner, you'll be looking for the beasts to be found in a level 40 zone, such as
Thousand Needles
. There are plenty of snakes and scorpions along the western edge of the former Shimmering Flats. As a change, the
Stranded Sparkleshell
tortoises yield
Turtle Scales
, which depending upon your server, can be very profitable.
You'll need level 275 before you can train for Master and once again Trainers aren't in convenient places. It is too much to expect a Skinning Trainer in Gadgetzan, after all. Once upon a time, finding a Trainer to teach Master meant a trip to Outlands, but no longer.
When you head to the Auction House, you'll find lots of Thick Leather in your bags.
Your newly signed Master License will have you looking for a level 50 zone, such as
Un'Goro Crater
with all those lovely dinosaur are just waiting for your knife!
Burning Steppes
is also ripe as the dragonkin, like
Black Wyrmkin
, have good drops besides the skinning opportunities.
Sometime after level 300, you'll be ready for Outlands and by level 350 you can leave for Northrend.
Hellfire Peninsula
and
Nagrand
and the only Outland zones you'll need to visit.
Outland creatures yield Knothide Leather.
Early in your time as a Grand Master,
Borean Tundra
has plenty of Rhinos to farm. Sometime before level 400, you'll be ready to move on to
Sholazar Basin
. It'll seem like all the mobs in this zone are skinnable. You can't train Illustrious until at least 425 and you'll want to before you hit 450.
Another consideration when hunting for Borean Leather farming locations is meat drops for the Cooking profession.

Deciding which Cataclysm zone to farm depends on your server and after MOP, some zones will become much easier.
Mount Hyjal
(Sethria's Roost) and almost anywhere in
Vashj'r
are good to start with. Something to remember,
Tol Barad
has a
quest
that have non-skinners leaving lots of
Crocolisks
while other quests leave dead
Spiders
around the Darkwood.
Cataclysm zone creatures yield Savage Leather.

This looks great - I'm surprised it took so long for someone to write a skinning guide!
A few thoughts:
Pictures are good not only to break up text and draw in a reader, but also for showing something better than it can be explained in a reasonable length - perhaps you could include maps of each zone showing prime locations to farm kills for skins.
While I agree that the
Gnomish Army Knife
is great in terms of multi-tasking with professions, it's not a clear winner for use. Especially for max level characters, any of the knives that have +10 skinning are preferred because they allow bosses in lvl85 dungeons to be skinned.

For the wetlands, the best place to hang around is where the dragonkin and orcs are fighting (Coords: 70.7, 47.1), near unlimited skinning, and all you have to do is kill the mobs before they kill the dragons.

Easiest way
I've found for plowing through journeyman skinning if you're on a high level toon, just go to Wailing Caverns, run around the first circle inside where you get all the raptors, make them all follow you till you've done a complete circle and then AoE! Presto! lots of skins. minimal effort. I had to reset twice and i was done. tell your friends.

May I say that Ironforge has a good ground for low lvl skinning if you do a circle around steelgrill depot you get a good group of pigs and wolfs up to 110 lvl before moving!

Just to let you all know when a mob skinning turns yellow, green, or grey and you have a item that gives +10 skinning (or mining/herbing) it really turns that color in 10 more points. For some reason when you have those items equiped it shows the mob as 10 skinning points off, however you still have those 10 points before the change. So some grey mobs are still green and you can get another 10 points before you get nothing.

I was looking into a couple other guides and this one has helped me the best for the lower mid ranges. Thank you. The other guides want you skinning greens for far too long and you don't always get a skill up so this helped me out a lot more.

as soon as I hit 125 I went off to a trainer and following this guide I went to stonetalon but they were too high so I cruised around for a bit and landed in Ashenvale Bough Shadow. I killed off several Emeraldon Oracles and leveled up to 165 rather quickly. at the time of this post it took me less than 30 min to get to 165 and they spawn pretty quick too. I jumped to 202 here and stocked up on a lot of light AND medium leather. Great place to train and Farm.

I found that the easiest way to level up is from Journeyman to Artisan is to go into WC and farm, i got all the way from about 70 to 145 in there

Wod changed skinning a lot, now you can skin anything regardless of level.
