No solable, he has ~100k hp and hits for 1k on cloth 2.2 crits

From the PTR: He's involved in a questline that leads up to the soloable quests from Ogri'la. He has a single special attack, a bleed type debuff on a secondary target, so you need to keep an eye out for it if you're healing. It was certainly enough to take down our rogue.

Yes, this information on his life in WRONG. DO NOT ATTACK. He is death.

This guy hits A LOT harder than 1k.
A group of my guildmates tried to 4man him, and he has a series of enrages that nearly tore us apart... thankfully, we had our Paladin survive and we managed to zerg him.
This is for the quest Grulloc Has Two Skulls, obtained by the Naaru in A'dal's room.

Grulloc is a dps race. Every so often he'll grow larger and the damage to your tank will increase. By the third growth, damage spikes can hit 6k.
Tank should open with as much high threat as possible so that the group can get dps rolling quickly. Watch the bleed he causes to secondary targets, but otherwise just dps as fast as possible and drop him before the fourth growth.

As an additional note:
he is not kite-able. If you pull him too far away from Dragon's End he will reset and go back to his orriginal place.

We did it with a Rogue, Mage, Feral Druid (With no tanking gear), Holy Priest, Hunter, and a Warlock out of group. He's not hard, easily tanked. When he enlarges and it gives a text emote, start kiting him. When he shrinks down again he'll be safe to tank.

Grulloc can actually be 2-manned without difficulty by a tank and healer with 5-man attainable gear (it'll take 15 minutes, though). I did it last night with a priest.
A super-geared feral druid can probably solo it if his mana regen is solid.
The trick is this: when he "Grows massively powerful", everyone gets out of melee range. He can be very VERY easily kited in a circle until he shrinks to his normal size. If you keep him near his sack, he won't leash and reset.
There are three main things to watch for:
1) When Grulloc grows large and red, all melee out.
2) When he shrinks again, he has some strange aggro mechanic. Make sure the MT is close by to pick him up if he strays.
3) His bleed effect. It does a significant amount of damage, so make to sure heal to full anyone who gets it.
He also crushes the tank's armor, but this will usually fall off after a kite or two.

Tanked him and Maggoc as a 70 enh sham 9.2k hp, 4/5 glad s1 gear, and badge shield. He's pretty easy, just kite him during enrages (he's extremely slow).

Skills:
Grievous Wound: 750 dmg/2 seconds. Lasts 1 minute, or until target is healed above 90%.
Burning Rage: +200% damage, -70% move speed. Stands still a few seconds, grows big and red. Emotes "Grulloc grows massively powerful!".
Health: 120,000
Damage: 600 a hit versus 75% migation

Burning Rage
can
be used at the same time as Grievous Wound, making it very hard for the healer to keep the tank up, for this reason it would be wise to kite him during Burning Rage even if your group would be able to heal through it normally.
Each time Grulloc activates his Burning Rage ability he will stop attacking for a second or two while growing. The icon for Burning Rage (as well as the red effect) shows up at the start of this short delay, this will give the tank plenty of time to turn around and run out of his melee range.
If you tank him at the side of the canyon, with Grulloc's back facing the wall, you can run across to the other side. By the time Grulloc reaches the tank Burning Rage will have faded and then the tank would only need to turn him around so the same move can be repeated at the next Burning Rage.

Soloable by 78 Feral Druid in Eviscerator set... basically just kited him when he was enlarged, and kept myself topped off to avoid the Grievous Wounds.
Make sure when you kite him that you don't go too far... he has a very short leash. I kited him between the wall behind him and the ground beneath his ramp... back and forth till he was dead.

And soloable by a lvl 80 protectionwarrior, just tank and spank even if he grows bigger and gets red.

Complete joke as an 80 Blood spec DK w. dual wield. He could barely outpace my Mark of Blood and Bloodworms, even when enraged. Summon ghoul, pop chains of ice so your ghoul aggroes him, channel AotD, and then just let him have it and pop your rune sword when you get the power. This guy never brought me below 50% health, and with a 4k Rune Tap, I didn't even break a sweat.

This is soloable by an 80 boomkin in heroic blues / Naxx 10 epics. Hot yourself up with regrowth+rejuv, keeping these up for the whole fight and use nourish as needed.
Open by throwing your treants at him. Make sure to keep insect swarm and moonfire up and pop travel when uses Burning Rage to kite him. If you see your health going down signicantly, a few nourishes should keep you up fine, if you keep your other hots up as well.
I used mainly wrath and then starfire when I got an eclipse proc. Took a few times to get him, but after I read this page and the recommendations to kite, I got him on the next try.

An absolute joke for a lv 80 rogue.
1st time i tried him I had to use vanish as he enraged and i was down to 1k health while he still had 39k
So 2nd time I used my 2nd spec that allows Preparation from subtlety and which also has a glyph that gives an extra 5 secs on evade, so a total of 40 secs if used twice.
Go into stealth and get into melee range, pop evasion/blade flurry and an extra attack ower trinket (which should be macroed all into 1 icon) then just dps away. When the 20 secs is almost over for the 1st evade, pop preparation/evade (macroed).
I downed him WITHOUT losing ANY HP.

As of 3.2.2 any tank class capable of tanking a 5-man heroic should be able to solo Grulloc with ease. DPS classes will mainly need to worry about avoiding his enraged hits. I tried to solo him in moonkin and he was hitting me for 4-5k and pummeled me to death, but switched to feral tank and he was nothing. He's not rootable, and I suspect most other forms of CC won't work either. Hopefully this saves some cloth caster classes a wipe or two if they decide to come and try to solo him.

Soloed him as an 80 feral druid in mostly Heroic blues and purples. My HP was only about 22k in Bear. The key is staying clear of his enrage. I did it by kiting him around on his little area. When he was not enraged, I kept Lacerate fully stacked and Mangled when it was up, and hit Maul when it was not. I always made sure Demo Roar was on him, too.
When he enraged, I immediately ran away from him (I usually ran to the opposite side of his area like raygunninja suggested. When I got sufficiently far away, I Moonfired to make sure he was kited and threw a Regrowth or Rejuv on myself. By the time he got within melee range, he was back to normal.
Be very careful not to let him hit you while in caster form. I took a hit for around 4k >_<. Use Barkskin when up and Frenzied Regen if you need. Watch out for the Grevious Wounds - keep a HoT up if possible. Good luck!

Soloed as a level 80 balance druid (gear: lvl 200-245). I had a Well Fed buff (of +25 Stamina and Spirit) and Mark of the Wild.
What I did first was throw my trees at him, let them get a little aggro, moonfire, popped my trinket (346 SP), and Starfalled. I made sure to keep Regrowth
and
Rejuv on me, and used Nourish when I was getting low on health, using mainly Starfire now and then. Once he enraged for the first time, I renewed Moonfire and Insect Swarm and ran away while he was growing (this gives you a head starts of a few seconds). If you run a little bit past his resting spot and then back in a circle, he won’t reset. Repeated until he enraged again, ran around, then popped my Starfall and finished him off :).
Over all, it only took a couple minutes.
edit: I also used Barkskin the first time he enraged because he caught up to me.

How times change.
A few weeks back I struggled to solo this guy as an 80 Blood DK in blues and purples.
I just came back as an 83 Frost DK in quest greens and spanked him without taking any hits.
Revenge was mine! :)

After two attempts at soloing him, and getting more avoidance, I managed to solo him at level 70 on a protection paladin using almost every single CD I had at my disposal. When I finally soloed him I had ~18% dodge, 9% parry, 5% block, 13k armor and ~13k health. I was using Kings, Seal of Insight, and had the talent for WoG that gave me a shield instead of overhealing. I'd use Flash of Light to get me back to full, pop WoG for the shield, and continue to melee him down using Crusader Strike, Judgements, Consecration, Holy Wrath, and SotR using one Holy Power for the increased DR from blocking so I could use most of my Holy Power for WoG. I had the +armor trinket and +dodge trinket equipped using them whenever possible as well as Divine Protection when he enraged. At one point I either used LoH or Divine Shield, but, if you have good enough gear and enough avoidance you can solo him at level 70, but it won't be easy as he is, IMHO, the hardest one to solo.

Currently attempting to solo as a 70 rogue (Assassination spec, 6/8 T6, Crux of the Apocalypse MH, Tracker's Blade OH, Darkmoon Card: Crusade, Madness of the Betrayer, assorted other raid pieces, PvP neck and cloak).
So far I can confirm:
Grulloc is immune to all stun effects (Sap, Cheap Shot, Kidney Shot).
Grulloc is immune to disorient effects (Blind).
Grulloc does not immediately apply the Grievous Wound debuff, as I have thus far been able to avoid it entirely.
Grulloc has approximately 50% damage mitigation from innate armor value.
Grulloc is not immune to Deadly Poison or Instant Poison, however he
is
immune to Crippling Poison.
Grulloc is on a short leash, so if you try to kite him (or run for your life) out of his small canyon, he will chase only about thirty or forty yards before leashing and resetting.
Despite his size, Grulloc does not hit especially hard (1200-1500 range on about 32% damage reduction from armor). However, as most 70s will not have 12000 health pools or higher (unless they are tank classes or well-geared) he will kill you long before you are able to burn through his nearly 140k health, and so it is not advisable for the average 70 to attempt him solo.
If it does turn out to be possible to solo in raid gear, I will post as such. As a class with no effective means of healing enough to overcome the Grievous Wound debuff (bandages will break on DoT tick every two seconds), a rogue is probably not the best class for this job.
